Got a lot of fresh herbs in the fridge, so baked cod with a herby crust for lunch. The herbs are two kinds of parsley, tarragon, coriander, dill and basil. A large red chilli to add a bit of a kick, and a couple of garlic cloves.
All chopped in a small electric hand blender and some olive oil added.
A good handful of freshly made breadcrumbs added to the mix.
Get the cod as dry as possible.
Then cover with the herb mix.
15 minutes in the oven and they're ready.
Some garlic mash and buttered peas complete the meal.
