    It is a very general kitchen rule. Everything sweet is enhanced by a trace of salt. Everything salty or sour is enhanced by a trace of sugar.

    Of course take that "everything" with a pinch of salt.

    Hehe, I'll take that with a pinch of salt!

    I do know the use of sugar and salt in cooking but not with shrimp as they are saltwater (well, the better ones are) crustaceans and have a sweet-ish taste . . . so why the sugar and salt in this context.

    (Nicest shrimp ever was digging into a bucket of Nordsee shrimp on a ferry to Wyk auf-Foehr . . . summer and it was even warm/hot!)

    Probably peeled in Morocco. They send the Nordsee-Shrimps there for peeling and ship them back to sell as local product.

    Nope, caught that morning and the shelling was all ours - mind you, this was a while ago - decades. They were almost sweet . . . ah, the times of no cholesterol!

    The hotel I stayed at was situated in the area and I took this picture from the hotel room.

    What part or suburb of Manila do you think the high rise in the background is?

    It's the Silom/ Suriwongse equivalent that you will find in Manila and has a famous street full of bars.
