I do know the use of sugar and salt in cooking but not with shrimp as they are saltwater (well, the better ones are) crustaceans and have a sweet-ish taste . . . so why the sugar and salt in this context.
(Nicest shrimp ever was digging into a bucket of Nordsee shrimp on a ferry to Wyk auf-Foehr . . . summer and it was even warm/hot!)
Probably peeled in Morocco. They send the Nordsee-Shrimps there for peeling and ship them back to sell as local product.Quote:
