first time I ever went DM amari was when the marcos shit was going down,got a free night in there, the breakie was really lush and having a hot shower after 3 weeks on Samui just made it.
last time was about 2 yrs ago it was full of Chinese and the breakfast was really mediocre..

lol As i said JM is good doesn't mean you have to follow everything he says.
Nev there are many Chefs who have many differing recipes, you tend to use the ones that you feel do the better job for what you want,. and you adjust Recipes to what gives you the better result.
its all about experimenting and finding what suits your tastes.
i used to do work for le petit blanc and old Raymond was convinced we used his spec sheets, I was interpreting his recipes to my own ways but getting the same results.
JM may have a great recipe though through your own knowledge it can become better,but his knowledge helps you get the result you want.
its all about trying something different.
