    Anybody else here waiting for pictures of Mendy's "Mediterranean" lamb?



    I wonder what will set it apart from his usual peas and gravy? Is he gonna put a pair of sunglasses on it? Or does he only save the cosplay for Anna?

    ^^ why did you put beer in the pot?

    and get yourself some proper knives, honestly, they're a game changer in prep work.

    My two favorites for veggies, a nakiri ( the big one) and the santoku. Both are sharp enough to shave with and cost less than maybe 5K baht. You just need to hide them from your wife.

    Hence why it was on the unit... it had been forgotten at the bottom of the vegetable basket for a long time and I wanted to use it up.


    Anyway, eventually the lamb juice was thickened up with stock...



    Tomatoed up a bit...



    Chopped pepper...



    And then a bit of Mediterranean magic!



    Time to pick some fresh veg!



    After a while the lamb was finished up in the convection oven to braise and thicken up.



    Everyone loves the smell of braised lamb shank!





    A modest portion of peas accompanied the fresh garden veg.



    And viola... 'Braised lamb shank Mediterranean style!'

    ^ That wasn't my finest hour!

    However things do work out on occasion.

    I keep bags of pre-prepared Cottage Pie/Spaghetti Bolognaise mix in the freezer for emergencies. That Cottage Pie was a disaster but Friday night's Spaghetti Bolognaise was the bollocks and it took just half an hour to finish off!

    With grated Cheddar.

    I hesitate to call this authentic Mexican food but last night I had a kind of baked chicken burrito kind of thing.

    I substituted guacamole and salsa for a chopped rocket and lettuce salad, straight from the veggie patch.



    No-one appeared too bothered about my meal's authenticity.



    The money shot... a cross-section of the 'burrito'...

    It really was good and I have another for lunch today.

    Well, you've inspired me.



    Have my world famous pork Taco sauce in the fridge, sour cream, and cheese. Nacho chips, and wraps.... If the lettuce is still crunchy or has turned to black liquid will be the deciding factor of dish preparation.

    Got quite a good deal at Morrisons yesterday on their Steak Saturday deal....1.1kgs of fillet for 20 quid a kilo. Left the other .1 they had for someone else

    On my second of 4 now.
