It is and it looks good!. First time bone marrow has ever appeared in the food threads here I think?.

Bone marrow, it was a first time for me and I thought it was decent. Steak was good, even if it was automatically cooked well done as is the preference in Mongolia, no idea why

Low quality meat that is none too fresh is the usual reason.

It was tender enough and well seasoned. I seem someone mentioned that Mongolian meat carries quite a few nasties so it needs to be cooked well. We are in the midst of another plague outbreak as someone ate undercooked marmot or got bitten by a marmot

Crispy on the outside and creamy on the inside, a bit like a savoury creme brulee. Like steak fat, but richer.

....bone marrow is better enjoyed when taken to heat long and slow.
Has little to do, in comparison, to it's meaty counterparts.

Universally understood.
Or......perhaps not.
