Round two of the spiced chicken last night, that I'd made on Saturday. As ever with these kind of dishes, tastes better having been in the fridge for a day. Only thing different was adding some cream to the sauce before reheating it.

To all others as well, really great cooking lads, I feel left behind so I think it is time to get into the kitchen and learn a few things!
Fancied some cauliflower cheese today, but what to have with it? I'm quite happy to eat it on its own, but opted for a pork chop and some mashed potato. Decided to roast the cauliflower rather than boil or steam it.
Light coating of oil and S&P and in the oven for 20 minutes.
For the sauce, needed to fry up some onion first.
This particular recipe calls for spices, including cumin seeds, curry powder, mustard powder, fresh green chillies and black mustard seeds. When the onion cooked, the spices added for a few more minutes.
Cream, then grated cheese (in this case, mature cheddar) mixed in and simmered until smooth.
This poured over the cauliflower in an oven dish, with some more grated cheese mixed with fresh breadcrumbs and parley scattered over the top.
Another 20 minutes in the oven, followed by 10 minutes under the grill and she's ready. Smells great, looking forward to it.
Simple mash potato, with only a raw egg mixed in rather than butter or milk/cream.
Fairly large chop, bone in, which is going to be baked.
Made a rub of S&P, paprika and brown sugar.
30 minutes in the oven, turning over half way. A few minutes resting.
Very pleased, particularly with the chop as I haven't baked them that often in the past. Cauliflower lived up to its promise also.

It was a leftover dinner before I left home for s short trip,away, but surprisingly nice.

Pork chop could have done with being removed from the heat ten minutes earlier, imo.

I've just completed a very enjoyable three day business trip to Bangkok and thought I'd share a few of the culinary highlights. They were a mixture of Lunch and Dinner to be honest, but what difference does it make in the city that never sleeps?
Fish and chips in Fitzgeralds on Soi 4 (used to be Hanrahans) on Day 2. I was really hoping for a gammon, egg ad chips with a slice of pineapple but they no longer have it on the menu.
Nice, firm cod. Better, to be honest, than the pla nin out of my pond at home. A generous portion of peas as well.
A pre-lunch pint on Day 3.
There seems to be a new 'English' style bar opened opposite to Fitzgeralds called Chequers, and one of the highlights of my trip was watching a girl with the shortest of shorts and the most stupendous pair of legs I've ever seen reach up to wind in the awning as it got dark on the previous evening.
Anyway, Smoked Cod Chowder for lunch. I was hoping for steak and kidney pie but they no longer have it on the menu...
And very nice it was too. I have no idea what makes this a 'chowder' rather than a soup but I intend to do some research. I think my next project will be to start smoking pla nin I catch from my pond at home and have a go at this.
On the way back to my hotel last night I finished up the trip by picking up a nice larb moo. I'm used to the moo being minced/chopped but the girl assured me this was also larb moo.
