Start by lighting the coals. These nifty chimneys do the trick. This one has seen some use but still going strong. About 10 minutes or until flame comes out of the top.

I used some disposable metal trays this time.

almost doesn’t fit on the Q. Been cooking these at about 200f since 10:30am, for a 6:00pm dinner
