I think some people may interpret 'next weekend' as the weekend of next week.
I have never used it that way.

Next and This have the same meaning on Mondays. I wouldn't use Next for the rest of the week at all just to prevent confusion. "The following weekend" is what i would use to mean the weekend after this coming one.
Definitely 5, 11 days would be the weekend after next. The only way it would be 11 is if the coming weekend had already been talked about, ie "I'm going to Pattaya this weekend and then Chiangmai next weekend."
Doesn't matter what the grammar books say, if you say "I'm going to Pattaya next weekend" on a Monday morning and you mean in 11 days then you will be misunderstood by 99% of the people you speak to.

5 days because it is the next weekend coming up on the calendar.
Monday was what made the debate interesting. That is probably the only glory Monday will ever have as it is not exactly anyone's favourite day of the week.

Of course if you are using a thai calendar then it gets really interesting because this weekend, or the weekend of the current week, will be last Sunday and the coming Friday and Saturday.
