    I haven't eaten a Rainbow, Cutthroat trout I have caught in probably 20 years unless it was wounded and would have died. That doesn't happen often fly fishing as you usually lip them and I use barbless hooks as that is how I have caught them. I always catch and release. However I have and will eat any Steelhead or Salmon that would run up the rivers during fishing season. They are incredibly delicious when properly cooked. The wild Chinook that Snubs is talking about is an outstanding fish to eat (No not in some Brit fish and chips plate with canned beans, you heathens ).

    As Snubs mentioned, the active conservations for Salmon/Steelhead from California to Alaska is top notch and tightly managed to avoid killing off their spawning grounds and over fishing. Of course if you haven't fished any of the Pacific Northwest or Alaskan water ways then you really have no idea. I have caught some 8 to 12lb Salmon on the Trinity River and took them home and we had Salmon steaks that night for dinner. Nothing better then Fresh caught salmon with just a bit of seasoning and a squeeze of lemon.

    Snubs are the Chinook running up the Colombia river now?

    They are, but I think it is coming to the end of their run, they have been coming through at a peak, mid-August same here in Seattle.

    ^ I've caught 'brown trout' in mountain lakes but whether they were a different species I have no idea.

    To my knowlege haven't eaten smoked Greenland halibut in Norway although my memory isn't what it was and I've been working there since 1991.

    If I'm offshore the catering is on a budget, and when working onshore (pre-Brexit, of course) I tended to stick to takeaway food.

    While I was watching TikTok the other day I discovered something that really made me stop and think, 'Wow!!!'

    Did you know that the hole in a chopping board isn't for your hand, or to hang it up, but it's to shovel the chopped veg through into a pan so that it doesn't go everywhere?

    I demonstrate here with some chopped onion and garlic as I prepared tonight's casserole, which may or may not appear later on this thread depending on how things work out.

    At least your wife knows what to use the sticky rice steamer basket for. For the last few months the Thai's have been having a good laugh at some very confused tourists.

    . Well ya just can't make it up AO.

    My wife uses a rice cooker for khao suay but always steams Khao neow in the old school bamboo basket. She says the cookers make it awful.
