IN California we got them little carnecarias all over the place in old forgotten strip malls. They're more like a mexican grocery store than butcher shop. Usually, the good ones'll have a few tables or booths full of mexican laborers after work with cans of tecate piled up on the table.
There'll be a counter with tacos al pastor, cabeza, carnitas and carne asada for sale along with a feww other items. usually torilla press is whippin' out them corn tortilla as fast as they are gettin' ate. Them Messicans don't even knwo they're in the US, drinkin and stuffin them selves with tacos, tortilla chips, pickled Jalepenos and the occasional "cocktel de cammarones."
Although I like fried shells, the real mexican taco ain't fried, definitely not some formed and pressed Piece of shit. It's fresh corn tortillas slightly warmed, usually two, wrapped around some savory meat and sauce. Little slice of heaven in run down strip malls or from the taco trucks parked along the backroads...
