You're right. Sometimes when the place is jammed you can just sit in bar, order up some great beer and dine on the bar snacks. Better than the restaurant and, when it's cold, they usually have a big fire going.

Last night we (Aging One, GoW, Ken May, Wally, William and AO's family) had a Mexican blow-out. I'm still stuffed now.

    Here's the chilli...

The chilli was full bodied, but didn't have any heat. It tasted great mind, so I'll let Pops off this time.

Here's the production line. Pork and chicken with salsa for the fajitas. They teasted great too.

And here's me being a heathen and putting chilli in my fajita.

I felt like a beached whale afterwards, but I managed a good clearout this morning, so I'm feeling better now.

Since Marmers forgot all the tortillas he bought we did discover one thing. 22 month old tortillas if kept in the freezer are still damn good!!!

    AO's salsa cruda:

Get yourself about 12-15 nice medium tomatoes, they arent as big here as back home so you will need that many. A can of whole tomatoes, 2 nice onions, a green or red bell pepper up to you. 2 or 3 or the red finger sized chilies, a couple or 3 cloves of nice garlic, and about a cup or pok chee or cilantro. The cilantro should be a cup after being chopped. 2 limes.

Blanch the tomatoes for 30 seconds in boiling water, throw in a big pot of ice water. Then peel and dice them up saving the juice. Dice up the canned tomatoes as well, and save the tomato stock that is left.

Finely chop all the other ingrediants so they are all roughly the same size. Bung it all together and add salt pepper and the juice of the two limes. Stir it up and refrigerate at least a couple of hours.

Taste it if its not hot enough add some dried chile flakes, if its not tasty enough add a bit more salt.

Oh yeah add some of the tomato juice from the can you used so you have just a bit of juice to hold it all together. I used about 1/2 of the remaining juice and I was making salsa for 12 people.

Danitos tortilla chips end off this nice snack.

I take the seeds out of the chilies as my kids like the salsa, but if you want more heat leave the seeds in.

    Bon Appetit.
