    Dry aged is good, and generally doesn’t need marbling. They’re likely to be 14 or 21days. Enjoy.

    At that thickness 2 minutes each side & then rest 4 minutes will be a medium rare. You want the pan or grill as hot as you can possibly get it.

    You are one dumb mofo. Grilling a steak does not dry them out you nitwit. That only happens if you cook them to shoe leather like you do.

    To be honest, the steaks didn't really make the cut and I didn't want to sully this fine thread with food that wasn't truly decadent.

    I mean, how can you compete with bread rolls filled with cheese...

    All toenails doing very well at the moment, if you're interested.

    The chips were the best I've ever made and I really think I've got the hang of them now. Cooked for less time on high heat from frozen and the insides are nice and soft while the outsides are nice and crunchy.

    looks to me like you didn't have the pan hot enough, oil the steak and salt, really hot pan and 2 mins a side, i'd add a knob of butter once you turn it the first time
