Made a batch of Tandoori tonight.
It was not as hot as the recent Vindaloo so I chopped 4 birdseye chillis and chucked them in and that did the job.
But I then made the mistake of scratching the top of my arse crack with my chilli fingers.
Fook me arse was stinging during dinner.
I tried to ignore it for 4 hours assuming it would abate anon.
Finally gave in and googled up a cure.
So I have been dabbing the top section of my burnt cleft with vinegar for half an hour and things seem to be sorting themselves out.
Apparently Capsaicin is an alkaline chemical and any kind of acid will neutralise it.
If you have a burning mouth apparently acidic orange juice will help more than the milk I usually go for. Although milk is also slightly acidic.
^hmm. Haven't tried orange/ lemon juice to alleviate spicyness, have just used milk, ice cream or yoghurt.

Recently I have been focusing on how to cram more protein into my curry (using pea protein powder and extra chicken) but that has got me thinking that a few measures of whey protein might go a long way to turbo-charging the white sauce that makes the fish pie surprise. And also amping up the fish content 2x or 3x

Today was a new curry batch after 2 weeks on the Tom Yam
Tikka Masala this time
I brown the onions first and then fry the 1.2kg of chicken and add the paste as the chicken is sealing
Then add 2 tins of tomatoes and 2 tins of coconut cream and then do the witches brew of spices and condiments and garlic and ginger
Then pimp my protein and serve, but this time added some flour, as relying on protein powder alone does not get quite the right consistency and the pea protein imposes itself on the flavours if overdone
This curry is a chicken dinner winner. There is something about this batch that is truly addictive eating. I thing moderating the protein with flour was a key step.
I told Signorina Singapore about the awesome batch yesty and she decided to come down from Brisbane to take back possession of her beloved VW SUV after my 2 week test drive, so we watched the waxing gibbous moon rising over Burleigh.

This long grain white basmati is big improvement on the strange short grain fake 'basmati' that I got conned with last time. White basmati is way more moreish than brown. But that probably makes the brown healthier since you don't eat so much of it.
I had a cracking ruby at the weekend at this South Indian place I've been frequenting of late. I was planning on just having a dosa or something, but you know how it is when you open those magic doors, get the whiff of spices and hear Ravi Shankar on in the background.
A couple of portions or rice, onion bhajis, two aloo parathas, which ended up being all mine; Chettinad lamb, a mutton curry I'd never had before and a butter chicken just to try and take some of the heat away. I loaded up the spice a bit too much and was paying for it the next day, but it was all bang on and there's nothing like a taste of home, is there?
It's not normally quite as spicy as I like it, so I decided to overstate it to get the amount I wanted and told the waiter I wanted it "extra spicy."
It was a different chef that day, obviously.
I'd never dream of saying that at home cos I know the consequences and have made a mental note not to do it at this place on a Sunday.

Day 4 and the Tandoori batch was still as fresh as a daisy and got the thumbs up
The fairy lights had bust a fuse so as the embers dimmed in the fire-pit we were forced to make our own entertainment.
