If it is from Sturgeon it is called caviar or now Black Caviar.
If it is from Salmon, Trout et al is is called Roe. But yes clever marketing people can call is Red caviar.
Roe or Red Caviar as has been stated already is used in sushi.
Just another example of a name of good stuff being usurped for normal dross.
I suppose one could eat red caviar with sparkling wine, as long as it is described as such.![]()
