Sorry Koojo, I was wrong. It was charging some Oreo cookies.
It was something I read many years ago. Just looked it up again.
"During the scene where the buffalo is charging at the young Indian, the buffalo is actually charging at a pile of its favorite treat: Oreo cookies".

If there’s a buffalo heaven, it must be a vast grassland pocked with Oreo cookie bushes beside streams foaming with German beer.
They were Cody’s favorites.
Cody, the All-American buffalo born on July 4, 1987, and raised by Minnesota ranchers for a life of travel and fame — highlighted by a starring role in “Dances With Wolves” — died Thursday from complications of kidney failure.
Cody was buried Thursday — with a fresh package of Oreos — on the ranch.

``We also had two trained buffalo,`` Wilson added. ``Mammoth was formerly Neil Young`s buffalo, and Cody was a buffalo that would come to Oreo cookies.``
Mammoth was used to play a wounded buffalo; wranglers would clip arrows to his coat and send him running past the camera. Cody`s fondness for Oreos made him a natural for the scene where a buffalo charges a stranded Indian youth. Although it looks like he`s headed straight for the kid, the beast was in fact charging a pile of cookies.
