Such generalisations are rarely, if ever, 'true'.
A personal experience of a seleted few of a group raised to a generalisation is prejudice, negative sentiments following this in word and deed are discrimination, when the group of people belong to a race, it's racism.

Generalisations are, per definition, never true. Generalisations are general, sometimes/often unfair, but they can also be useful if you keep in mind that they are not 100% accurate.

It's possible that race is a purely social classification used to advance political ends. Maybe classifying people by their hair colour or their eye colour would have the same validity. There doesn't seem to be any agreement on what makes a race and whenever people do try to define it it just leads to an almighty shitstorm.

Israeli national identity is based on race and religion.

"Israeli" as an adjective refers to the country of Israel.
The way you used it was a substantive, referring to a person of Israeli nationality.
There is a big difference in offensiveness between saying "Israeli foreign policy is crap" "Israel is crap" "Israelis are crap"
Maybe you've never been insulted on the basis of your nationality, or what makes it so difficult to understand the differences?

In Israel there is a legal difference between citizenship and nationality. Many Arabs have Israeli citizenship but none have Israeli nationality. Having the status of Israeli nationality gives substantially more civil rights than having the status of Israeli citizenship. Israeli nationality is only available to people of the Jewish faith. This is defined in the "Israeli Nationality Act".
