I like the yam gai yam yai...or something like that. It's a spicy salad with lime, onions, cilantro and those black eggs that where cooked in hot sand, real delicious!

Actually, what I've got a hankering right now for is some kai ping - eggs which have a hole pierced in the top, spices mixed into the raw egg inside, and then toasted over charcoal.

Also, where is 'curried egg (sandwiches)' in the poll?

Was just going to mention "khai ping" - you beat me to it! Didn't know the name of the dish until now though. Also, I'm still at a loss as to exactly how they make them like that, would like to see someone doing it some day. A very tasty snack they are too.

Khai luuk keuy, or "son in law eggs" are also one of my favourite Thai dishes, as pictured here:

Eggs feature in Thai food quite prominently, and it's all the better for it.

My children loved Gypsy Toast, a slice of bread soaked in beaten egg with salt and pepper and a dash of Worcester sauce then fried, not too keen on it myself.

Not sure, but I do know that tomorrow Mrs Jo is going to make some kai ping (she likes it too) and then I;m going to show her how to make curried egg sandwiches. For our son's benefit of course !!

Man! I'm starving now. Poached are nice, over easy (very easy) scrambled with smoked salmon is unreal....

Fried ham, beans and toast cooled standing up.

    Oh yeah.

My mrs sometimes makes me a Thai omelette (like a spanish one) minced pork and diced veggies filling.

I got a really nice tiny fry pan especially for my eggs, very important for good eggs.

Splash out on a chair or two, it might taste better sitting down.

I like ham and mushroom omelettes but decent mushrooms are few and far between where I am.

Yes, more options are needed, Ant. JoGer also noted the egg-curry.

I cannot go and edit polls, so if you want you can tells us about a great Egg dish or Egg Style, and post a recipe or pic.

Gotta agree with that, hate hard boiled eggs (except in an egg mayonaisse), and if the yolk is hard on a fried egg would send it back.

Favorite is a couple of poached eggs with finnan haddock.

Scrambled eggs with Tabasco and diced onions/tomatoes generously sprinkled with fresh black pepper -- sandwiched between two pieces of whole-wheat toast.

I think fried are when you turn them over and sunny side up is when you just fry the white and leave the yolk runny.

Oh, I see. We just call both hard and soft, fried. You just say if you want it soft or hard.

I've heard about this dish...though I understand it varies regionally, they put a sampling of every conceivable food on one plate - is that correct?

And even more recently, about 5 min, what some people call gypsy toast.
