David, there are quite a lot of documents needed. You should have a rough itinerary of what she will do. I cannot remember if insurance is compulsory or not, but I always take it out - as an aside, I always make sure I have good insurance myself.

Yes, you will need paid for return tickets. You will need to have evidence of how her trip will be financially supported (that can be a letter from you). If she has her own bank account you can give those details. You should explain why she will return first (same letter as the support one maybe). She will need top attend a center to take bio data - and will have a (hopefully short) interview.

Overall, the main thing is to show that she has a good reason top return to Thailand (house etc).

I have done the process many times, and it is quite painless.

If everything is in order, we have had visas issued within a week, but we normally apply when we hit the 3 month to departure.

Just got a French visa for my travel companion (just let it pass cyrille) took 2 working days!

the service in Bangkok is quite good (at teh trendy building on Suk 15) by VFS.

ive never had to provide insurance information. My wife got a 10 year one which was a bit of a waste as it turned out.

you could get your friends to write a letter saying she will be staying with them which may faciliatte smoothness.

as Nidders says; follow teh VFS lists closely and should be ok. I cant remember how long it took but usually a lot quicker than they advertise (under promise and all that)
    we won it at wemberlee
we on it in gay paree...
