I prefer a goal where I have to do more when I failed to meet the target one day and I can do less if I I have done extra on a certain day. It more closely matches my work life where there is no one else to take over if goals are not met. If it rains on a particular day and I fail to meet my target then I have to do more the next day to keep the average. If the average is too high then reduce the goal but do so at a strategic, long term, level rather than a dynamic day-to-day one.

Having said that, I really like the Garmin Epix2 Sapphire with full world map coverage and the ability to accurately geo position my nature photographs. Not only that, but I may get to find the best way out of the wood when the wife and I get lost, which has happened (to an extent) on many occasions. I may even get to find out just which camp site we eventually pitched our tent.
No offence taken.. and it isn't really a philosophy it is just how my Garmin and most Garmin's work. If my goal is higher, it means I've done a lot that day, and if I don't meet my step goal the next day it isn't the end of my world, as I go to the gym and am active. That is cool that you like the Garmin Epix2 (what year is that?). I also use the GPS when hiking to see where I've been and map my walks. My bestie has the Garmin Venu 2 which is a bit more advanced than mine. I think that one may also have the world map coverage.
