LT, back when I was alive and spent a lot of time in bars, for me it was all about the landlord and locals. Decent food and beer were a bonus but I used to pop into a local bar for the chat for a couple of hours after work most days. An easy atmosphere with a bit of banter are more important to me than a range of drinks and food.

As for live music, unless it's in the background it's not for me but then I like an early evening drink and am tucked up in bed before the bands start up. I guess it's difficult to please everyone so you will have to use your space wisely so as not to exclude some clientele.
