I would have cut the gristle on that steak. It caused the steak to kind of roll up on one end. Mash and gravy looked fine..:)
^Valid point but if you like the fat-cap to remain and add flavour during cooking or to eat, a couple of 90° cuts into it will flatten things out. Had to do this with some pork chops yesterday!
