    Thai cooking oil

Here's a question, this morning I bought some new cooking oil for the deep fat fryer, now I got to admit I thought oil was oil and that was it, anyway there was some cooking oil on special at tesco so I bought a couple of bottles, brought it home and my girlfriend says the cooking oil for food has yellow tops and the oil I need for the deep fat fryer has white tops, of which she had a few spare bottles downstairs, now the deep fat fryer I use for chips and stuff and is in the upstairs kitchen, is she kidding me? and stole my nice yellow topped oil?

I thought you could use any oil to deep fry.... I heard that extra virgin olive oil is much better than other oils for your heart.

How come most thais use palm oil? because it's so cheap? and is palm oil really so bad for you? I read there's something in it that stops fat breaking down properly or summat.

I'm with Mid. Rice Bran Oil is available at Tesco and Villa here in Phuket, so imagine that Patt's is no different. Its a high burning point oil (much higher than Olive oil) and the food tastes great.

olive oil has one of the lowest boiling points of any vegetable oil.

No good for deep frying at all.

Yep. Peanut and sunflower oils tend to have the highest heating resistant points, therefore making them the best for deep frying and whatnot - though other vegetable oils of the odd sort can be justified along the same lines. Cautions need to apply when looking for "pure" oils, as the industry has created commonalities towards fusing a nexus of real oil and synthetic. Chances are, the everyday cooking oils that we use are of this nature.....100% pure and natural oils are becoming rarer in today's markets which reflect in the remarkable price of the "good stuff".

Agree to Jandajoy, olive oil has many qualities but is not suitable for deep frying

And anyway deep frying is no good for your health. Stick with salad, problem solved.

For chips, I cook the potatoes in a pressure cooker then shallow fry. More crispy, less oily. If you can leave the potatoes in the fridge over night after cooking them in the pressure cooker, it's even better (remove the humidity)

I had a house mate at uni who was a complete nut job. He would deep fry all his food in olive oil in the wok, then wait all night for the oil to cool, then pour the oil into a pint glass and down it because someone had told him olive oil is good for you.

For all that believe in the heart/cholesterol myth.

There is no evidence that too much animal fat and cholesterol in the diet promotes atherosclerosis or heart attacks. For instance, more than twenty studies have shown that people who have had a heart attack haven't eaten more fat of any kind than other people, and degree of atherosclerosis at autopsy is unrelated with the diet.

I just had a look at the white topped bottles and they do have a picture of a deep fat fryer on them, but it's just refined palm oil, not really worried about fat content or the other health issues as I'm sure smoking will most likely be the death of me anyway.

The palm oil widely available here is actually not that bad for you. It's what's most everybody uses for frying.

    A misperception from the past?
There's a good chance you've heard palm oil erroneously referred to and grouped together with palm kernel oil and coconut oil as a "tropical oil," a contributor to high cholesterol levels, or even as a trans-fat. Palm fruit oil is different and contains much less saturated fat than coconut and palm kernel oil.

Palm oil products are trans-fat free.
Palm fruit oil contains a variety of fats, vitamins and nutrients, but NO trans-fatty acids. Trans-fatty acids are found pre-dominantly in hydrogenated oils. Several recent studies have implicated trans-fatty acids in increasing the risk of cancer, interfering with fat metabolism, enhancing fatty deposits in the arteries, and reducing the body's ability to rid itself of carcinogens, drugs and other toxins.

Palm fruit oil is made up of a mixture of fatty acids and contains valuable vitamins and nutrition that our bodies need. Human studies have shown that a palm oil-enriched diet does not raise the level of LDL or total cholesterol, and may even lead to lower plasma levels of LDL, the plasma cholesterol most commonly linked to heart disease. The majority of palm oil's use in foods - in the baking of cookies and crackers, for example- is in a non-hydrogenated form.

    No need to thank me.

Generally, palm kernel oil is much cheaper than pure palm oil.
