    For those with no breadmaker or a broken breadmaker [as mine is], you may find this simple recipe to be almost as easy as a breadmaker.......My Hitachi breadmaker has been down for almost 3 months back and forth in the service center and not repaired so out of despiration I found this simple no knead bread that I have varied the basic recipe and have come out with better bread than my machine has ever produced.......so simple that a 4 yr old can do it.

    OK,
    I took that pic last night and posted it.
    I cut for toast the loaf this morning, and had to cut the bottom and top crust off and put the slices in my toaster sideways, and it was a perfect fit.
    And must be the flour as I have made 3 identical loaves 2 with White Swan Bread flour at 40 baht a kilo, and one with the new flour that is all written in Thai so I have no idea the name, but has a caricature of the space shuttle in blue on the label, and came from Tesco and is 60 baht a kilo, and it is the lightest bread I have made at 1kg even and was the tallest loaf I have made as it damn near touched the top cover of the machine.     I'd give the "no knead" bread a go but for the fact that my gas oven doesn't get hot enough to brown anything. I have no such problems with the bread maker as its electric. I must give 12Call's suggestion about fennel and tomato a go.

    Yep here ya go,, check out that texture of that loaf also..
    Notice where the dough hook driver left a spot on the bottom of loaf?

    PS..you can also tell how I like my bread from the empty strawberry jam jar and the butter dish....555

    We bought some flour bread from Makro the other day.

    Dunno why as we dont have an oven.......but gunna make one soon.....soon....I love bread also, i buy 2 french bread sticks from tesco and eat 1 on way home, the other gets butter and vegemite and is gone soon after.

    That's strange. See my post above on page 4 - I found that keeping the yeast away from the sugar and salt improved the bread no end - the rise was just miles (not literally) better.

    my machine says to put into pan in order listed in recipe, and this recipe is in my book that came with machine, and it was right up to the glass on this last loaf, so it seems to be in right order, and the only difference between this last loaf and the 2 before it is the sack the flour came out of..

    ^ Tops had run out of the Ozzie flour but I got you the next best thing, some genuine yankee doodle dandy stuff 2 x 2 kg.
    Picked up a nice dark rye flour, add 20% into the yankee stuff and you got yourself a nice tasting bread, and it will be better when I get the proper Ozzie flour to you in a week or so.

    OK, I tried putting the liquid in first with the yeast, and then putting the yeast, sugar and salt on top, and noticed no difference in the bread coming out of the machine.
    But due to the fact that the liguid is on the bottom and the other stuff on top, they are dry until it starts to mix, which it does 23 minutes after the switch is activated.
    I just took a loaf out and it was yeast first with warm milk/water, can see no diff. in the end product tho.

    Try putting the water - 2/3 cold, 1/3 hot, the sugar and the yeast in first and wait 15 minutes until the yeast starts foaming in the water/sugar mix. Then put the dry ingredients in. Don't ever let the salt and yeast mix as this will seriously retard the yeast. Seems to work for me anyway. Cheers.

    The loaf collapses because the cell structure becomes unstable and can't support its own weight, the main cause is over proofing I don't know much about bread machines but I would guess thats the reason.

    OK, so does that mean that I left it to raise to long then, as it was quite tall.
    should I have kneaded it again and then let it raise again?

    I have finally got it worked out for my machine for a bread that is the best I have ever eaten.
    in the pan goes warmed in micro 250 ml milk,150 ml water and 1 1/2 tsp instant dry yeast.
    450 g siam milling co bread flour
    150g rye flour
    3 TBsp sugar
    3TBsp butter
    1 1/2 tsp salt

    set menu 3 with light crust, which sets machine at 3:50 mins. at 1:50 mins left on clock, take out the dough hooks and then at 1:00 it starts to bake.
    Crumb is perfect.
    Makes a 1 KG loaf that is 7 inches tall and perfect finish.

    Now if I can get Peterpan to ship more rye flour.

    No real hurry Pete, cept everyone coming over here to have a sandwich for lunch or some stew or chili with bread for lunch and now Sunee wants a loaf to take to school for lunch on Friday and she wants it with Rye too, so I will have to open my last sack.
