^I thought Eddy the Lulu lived in Cebu, just a stone's throw from me? Now he lives in Phuket? I'm gutted.

@PAG - I saw your Locknlock containers! I have similar ones but smaller, and also use those generic plastic food containers. The contents of your freezer are impressive! Do you have a generator in case there's a power outage?

@shutree - stir frying in the dark? Don't you have a generator or at least one of those rechargeable lamps?

@looper - if you're going to cook a large batch of FPS again, then I suggest that you emulate PAG and keep some in the freezer in those little plastic containers. I think you put all that 1 or 2 liters of sauce in the fridge? I know it's a bio experiment, but still...

Electricity outages are a rarity where I live Katie. There's the occasional 'planned' outage, usually related to new power line installation, and even unplanned outages rarely last less than an hour. Phuket has had an ongoing program of electric cable upgrades for a few years now, and I'd put it on a par for the average Western country for supply continuity.

Usually any stir frying is done in the outside kitchen. With the rains come clouds of termites, so a lamp close to the hob usually means stir fried termites. Okay, if you like that kind of thing.

I was being a little dramatic. I do have a couple of rechargeable lamps and they are both fully charged and easy to reach in the dark. The inside kitchen doesn't suffer from as many termites, so I wasn't going to starve.

In the end, the power stayed on and I made PAG's cauliflower cheese. I'd never tried it that way, roasting the cauliflower first. It was good. No pictures because it looked a bit sad. The cauli shrank a bit in the roasting process so the roasting tray ended up being 50% too big by the time the sauce arrived. I'll use a smaller tray next time. Thanks to PAG for the inspiration.

@PAG - good to know that power outages are rare in your area. Shutree mentioned it (power outage), so it got me thinking. In my area, outages are also rare but if there's strong thunderstorm, sometimes the lights flicker.

@shutree - you can also try roasting the broccoli for "beef with broccoli stir fry". Saw that from a Chinese girl on YT (Souped Up Recipes) - I've tried cooking some of her dishes. Roasting the broccoli gives it extra flavour (but yeah, additional step). I don't do it if I'm pressed for time.

The gf suggested that we mix some broccoli with the cauli next time. I thought that might work and throw some leek in as well. So many possibilities.

The surprise here, was that there was no surprise.

Salmon, prawns, smoked haddock and cod... in a pie!

^ Shit, I just checked the menu.

    It was £18.00!!!

    No peas either.

    The daughter's whitebait was £8.00.

I wouldn't have left a tip had I realised that.

I make individual fish pies and stick several in the freezer. Key ingredient is the mustard added to the roux. Makes a big difference. A few shrimps and some tuna doesn't hurt either.

^^^£18 for a fish pie surprise! Que horror!

Are Mendip & daughter in the UK now? I haven't been up to date lately - usually watching construction & architechture vids during my free time.

    Here's a bump for Looper's FPS thread!

Unseasonably cold and after an early start from norfolk this morning i picked up some salmon, coley, smoked haddock and mackerel, covered in a white sauce with mustard, some herbs and capers topped with mash and a shed load of grated cheddar.

^ if you replaced the peas with some saute potatoes (controversial, I know but I'm in that kinda mood... ), that'd be nigh on perfect!

Eating out in the UK, especially for nice food, is shockingly expensive. Still, for your holiday, the time of your lives... every penny was worth it!

@malmomike - very nice Fish Pie Surprise, esp pic #3, because of the diff veggies. However, not a single slice of SPAM is seen, so I'm giving it a 9/10.

I just read that in days of yore a good Christian would abstain from meat during the entirety of Lent.

I missed that boat, so to make up for it I knocked up a belated batch of Fish Pie Surprise with 1 Kg of whiting

    Fish Pie Surprise-20250419_232643_-jpg

I forgot the fookin carrots again to add colour, so only peas again. And I need a larger pot with a thick bottom for making larger batches of FPS, instead of this two pot nonsense.

Noshalicious with rosemary, thyme, mixed herbs and black pepper in the white sauce
