Decided on a cheeky braai before I fly out today. Slow cooking some ox tail ribs on the Weber. Added some red wine, carrots and celery underneath, a dry rub on top and place them into the smoker.
After an hour or so cover them and keep cooking for several more hours.
A sneak peek* and these bad boys are coming along nicely.
*the general rule when slow cooking or smoking is not to open the lid often (and lose heat) because if your looking you’re not cooking!
But I did it for the ‘door!
