Mrs Mendip de-bagged it and brought it upstairs, but I think that was her only 'cooking' involvement. She picked it up while at the Amphur offices this morning sorting out this permission formso I can take the daughter away to Blighty in a few days. It seems she was successful and I now have this one page form... but it's all in squiggles and could well be a parking ticket for all I know.
After about a year of there being no Shake'n'Bake on the shelves, it's back! Bloody beautiful on oven baked chicken, a few veggies on the side an we're good to go for lunch today.

Tuscan Thursday? Well, could be, or at least a Spaghetti Bolognese. Eat pasta quite often, but rarely spaghetti. Anyway, gather the makings for the ragu.

First, fry off some finely chopped bacon in olive oil until turned crispy.

Then add some onion, carrot, celery, garlic, and fresh rosemary, all of which have been finely chopped in a processor.

Once the veg has softened, add the beef mince, mix together and cook until the mince is browned.

Then add a couple of tins of plum tomatoes, a glass of red wine, some dried oregano, chopped fresh basil, and halved cherry tomatoes, a crumbled beef stock cube, and a good squeeze of tomato puree.

Bring to the boil and simmer for an hour or so.
A handful of parmesan cheese stirred into the sauce.

Meanwhile, M'Sahib is going for a Clam fest. A friend of hers collects the clams from one of the beaches, and she dropped off a large bag last night.
Started off by frying off the obligatory garlic and chilli.
