Taking inspiration from Looper's recent cottage/thatched pie, went for one today.
First off, browning the beef mince.

Mince put aside in a bowl to be added later. Small amount of butter in the pan, and 'sweated' the vegetables for a few minutes. This one has carrot, onion, and leek.

Returned the mince to the pan, added a couple of heaped tablespoons of flour and mixed in.

Added peas, beef stock, red wine, and some tomato puree.

Simmered for about 30 minutes to reduce down, then into the oven dish.

Let cool down for about an hour before adding the mashed potato. Cooling the meat/veg helps stop the potato sinking when added. Not gone for a full 'thatch' of cheese this time, just some liberally sprinkled parmesan.

Snubbys red hot in melted butter came out on top this time, mainly because the cornflour, cayenne and lemon peppered skin stuck to the foil:)

Grilled ham and cheese on dark rye bread. We've found a bakery here that does incredible dark rye bread.

Damn tasty...the wife did a superb job.
Got a lot of fresh herbs in the fridge, so baked cod with a herby crust for lunch. The herbs are two kinds of parsley, tarragon, coriander, dill and basil. A large red chilli to add a bit of a kick, and a couple of garlic cloves.

All chopped in a small electric hand blender and some olive oil added.

A good handful of freshly made breadcrumbs added to the mix.

Get the cod as dry as possible.

This afternoon I'm out for a bottomless brunch.
20quid for an hour and half.
I've worked it out and anything over 4 pints of Strongbow dark fruit to go with the full English and I'm winning.
I reckon I could manage 6 or 7, maybe 8:)

I'm all for Strongbow but that dark fruit shit's sweeter than sugar itself and basically right up there with Blue WKD and Tropical Reef.

Gotcha. We normally use stale bread for breadcrumbs and any other leftovers get bought cheap and sold in wee bags down the fish pond.

My only petty critique might be shame thrown your way - one can easily grow all those fresh herbs [and better quality] on your property, instead of giving way to the store bought plastic encased variety.
