Fancied some bruschetta today, always good in hot weather. Took a baguette out of the freezer, loads of fresh sweet basil in the fridge, so good to go.

De-seeded and diced the tomatoes, and mixed with some crushed garlic, grated parmesan, chopped basil, then some olive oil and balsamic added.

Sliced up the baguette, turning the ends into croutons, and brushed with olive oil before crisping up in the oven.

Along with some pea and mint soup, a decent lunch. The rest of the bruschetta will no doubt be consumed whilst watching football tonight.

They are cooked so hot though - presumably to protect themselves from any food poisoning complaints - that it's hard work eating them and I forgot to get a fork so had to use the crust to scoop out the molten lava filling.

Yeah, 30 minutes before kick off. Full house as ever and a cracking seat too.
Had a pub lunch yesterday and, in the absence of my favourite cheese and onion pie, I plumped for a burger, which was excellent, but served on a stupid fucking board, so it was murder to eat.
And the SE Asian other half ordered steak and ale pie with a choice of mushy peas or baked beans....and she went for beans!

Get the kimchi and tuna cooking before adding the brine from the kimchi and two equally important ingredients in Korean food: the ubiquitous gochujang...and sugar.
