Think I'm going to look for a dual-probe thermometer, one probe for the meat and the other for the temp in the smoker. Maybe even a wi-fi one that I can monitor temps from inside. Everything I'm reading says you don't want to rely on the thermometers that come with the smokers. They can be way off supposedly.
