Chitty's Wild Garlic, Sweet Potato, Chicken and Vegetable Soup

Picked some wild garlic yesterday and was wondering what to do with it.

Answer - Create a healthy, tasty, nutritious soup.

    The ingredients..

Chitty's Wild Garlic, Sweet Potato, Chicken and Vegetable Soup-wgs1-jpg

Firstly bosh the chicken in the pot, then start preparing the veggies.

Separate and bone from the chicken for the mut naturally, that concoction can go in Piles dogs dinner thread later

Chicken is boiling nicely and the meat is falling off the bone, the dog will be happy.

This chopping of veggies is a little prick of a job

Meat separated nicely and the chicken and veggies are in the pot, time for a well earned drink.

I think it looks good, Chitty. A nice bit of bread to dip into it and you're sorted. I bet you'd scoff it all down after your climbing walk in Wales.

Get into it like a car boot.

I would guess its badly under-flavoured. Not really enough chicken there to get a good broth. Probably would have benefited from throwing a stock cube in on top. Plus some herbs would have packed a bit more punch (tarragon maybe). The addition of celery adds a good flavour also.

I added a chicken stock cube and some pepper.

Was hoping to blend the soup up but my blender died.

I found the sweet potato made the soup to sweet , just my personal taste.

My missus is working on some pickled veggies at the moment and I wonder how these products would work with soups and other braised meat meals.

Has anyone had experience cooking with pickled stuff?

I'm sure or resident suaerkrauts'll be along once they been Nok'd orf

I used to use pickled Daikon in Japan and some others but since quit smoking and taste buds returned very seldom eat pickled food.

I will make an exception for Danish style Rollmops a filleted Herring sold in Europe in a bottle usually and very tasty, could make here with small fish and dill and peppercorn, onion garnish, The only decent vinegar here is balsamic and that's too sweet and rich for Herrings

Im sure they'll be sold in Patters for all the Scandi-mongers

    Pickle Daikon recipe

If you can sourcce quality ingredients it could even be ina pasty with a contrasting , chiill, curry or raita sauce, I'd go dor fiery yellow curd chutney

    Quick Directions

    • Skin the daikon and cut into thin rounds.
    • Sprinkle daikon with salt and let sit for 2 hours to pull out moisture.
    • Add sugar, water, vinegar and sake to a small pan to bring to a boil. ...
    • Squeeze excess water out of daikon with your hands.
    • Place daikon in pickling container.
