    Luigi's Bacon, Roast Pumpkin and Green Bean Vermicelli Spectario.

    A fantastic light pasta dish, that's massively tasty!



    Pumpkin, bacon, pesto, and that's pretty much it.

    How to make your own delicious pesto??

    Slice up yer pumpkin into bite size chunks, add 2 deseeded (you girl) and minced red chilies.

    Dollop in olive oil, thyme and black pepper and give it a good toss.

    Get that baby in the oven,




    Then get stuck into yer wine.


    I recommend a 1996 Bourgogne Cote de Beaune.

    Done.

    Slice up yer bacon and fry.

    Cook yer Vermicelli and drain, leave a small bit of water.

    Stir in yer pesto, then yer bacon and pumpkin, salt and black pepper to taste.







    All 4 went back for seconds.


    Very tasty.

    It does tend to cause pretty bad constipation though.

    Looks very good.

    Lack of affordable good quality wine would really put a damper on living in LoS for me though, if I ever decided to give it a shot. Could always make your own though. Is there access to good berries over there or not really?

    Now, that's something i would cook. Nice and simple.

    But the wine.... a nice bottle of red would be nicer.

    Try out that Homemade Pesto if you get the chance to Pats.

    Very tasty smeared on some lightly toasted baguette with some mozzarella and a chilled Chardonnay upon a European afternoon.

    This was always the plan for the last dollops of that pesto.

    Can't beat pesto stired into pasta with roast pumpkin and bacon.

    Actually you can, but it involves going out and buying Feta.
