I do appreciate the taste of Isaan on my palate once every now and again.
Spicy, tangy, tasty, aged 20-23 if possible.
Their food is alright too.
I do like an ol' Larb Tod with my beer.
Start with:
Wrapping some chicken wings in foil and chuck them in the oven to slow bake. They'll accompany it nicely.
Get yer:
700grm or so of pork mince.
add in 3 chopped shallots.
some finely chopped galangal, lemon grass and ginger
Rip up (don't chop) a load of kaffir lime leaves, cilantro and mint. Lots of mint.
Squirt in some fish sauce (not too much) and lime juice (fokloads)
roasted rice powder
chili flakes
And some of a Knorr Larb powder mix.
Some flour
Then kneed that badboy into this:
Cover and chuck in the fridge.
Return to sofa to drink beer.
