Though techniques will differ.

I would have thinly shingled [sliced] the meat for easier consumption.
Can't imagine attempting to bite into that chunk with maximum pleasure.

I normally wouldn't divulge the secrets of my art, but.....crosshatch slice the steak about 2/3's of the way though before you build.
