1 large sweet potato grated
½ of a LRG onion
1 or two cloves of garlic
1 tsp grated ginger root or prepared paste
2 rounded tablespoons of Mayonnaise
Red pepper flakes
Cracked black pepper
Pinch or two of salt

Cooking oil to fry

Dipping sauce (Asian Duck Sauce or Thai peanut sauce)
