    i am the king of soft boiled eggs in my house. a bit of a pathetic boast but its about all i have to boast about.

    my wife can't get her head around the idea that timing is important.

    or that toast soldiers are an integral part of the experience.

    When cooking boiled eggs I only put 2-3cm water in the casserole, the eggs and then cover with the top. The water boils quicklier and as the eggs are not swimming in the water they don't knock together resulting sometime in broken eggs.

    Well that does it, i am never going to Britain. A cooking instructor cant even make a decent omelette.. And who makes scrambled eggs in a pot with a wooden spoon?

    If any body wants to know how to make a proper omelette just let me know. I taught the cook at a hotel in bkk how to make an omelette once after i ordered one and got kai jeaow. A friend's dad went and stayed there and said it was one of the omelettes he'd ever had.. Now I know why the Thais make such crappy omelettes, they were taught by the British.

    If you want to boil an egg don't tell the egg before!!! You have to boil the water first. When the egg does not expect it put it into the boiling water. Don't show any mercy for about 10 minutes. But after this do and take the egg out of this bad boiling water. The egg will like you and give you a great taste. Never feel petty with the egg!!! You paid a lot for it!!!

    Eggs in Purgatory Recipe

    How to make Eggs in Purgatory

    Ingredients;

    1 Jalapeno
    3 Cloves of Garlic
    Green Pepper
    Finely chopped onion
    Chopped tomatos
    Salt
    Chilli powder
    Cilantro
    Juice from 1 lime
    Balsamic Vinegar

    Directions;

    Seed and chop Jalapeno finely, add above ingredients to frying pan, fry for a few minutes, now place in blender and blend it nice and fine, place back into pan, at this stage you can add your favourite hot sauce and also some chicken stock, add 3 eggs to the frying pan and cover for several minutes.

    Garnish with cheese and cilantro.

    Eggs Benedict Recipe

    How to make Eggs Benedict


    Ingredients (For 4 people)
    • 4 fresh English muffins
    • 8 rashers of back bacon
    • 8 eggs
    • 1 tsp of white vinegar
    • 4 egg yolks
    • 2 tbsp of lemon juice
    • 9 oz (255 g) of butter
    • pinch of cayenne pepper
    • salt and pepper
    To make a simple Hollandaise sauce:

    1. Place the 4 egg yolks, lemon juice, cayenne pepper and the salt and pepper into a fairly large saucepan and with a hand whisk, whisk all the ingredients until they have blended together.
    2. Cut the butter into small chunks and add to the saucepan.
    3. Turn the heat on the cooker to medium and begin to whisk the ingredients. As the butter melts, make sure that you blend it thoroughly into the egg yolks. Continue to whisk vigorously until all of the butter has blended into the eggs.
    4. If the sauce begins to separate, add 2 tsp of water to the sauce mixture and whisk briskly until the mixture has combined together to form a creamy sauce.
    5. Once all of the butter has melted and a sauce has been formed, continue whisking until the sauce thickens to the desired consistency.
    6. Add more salt and pepper if required.
    7. Remove from the heat and keep the sauce warm before serving for up to 30 minutes.
    Once the Hollandaise sauce has been prepared and set to one side, you can concentrate on the other ingredients.


    The next step is to prepare the eggs and the ham, if possible simultaneously.
    1. Preheat the grill to a moderate heat and cut the bacon or ham into circles that will just cover the base of the muffin.
    2. At the same time start to poach the eggs (see our section on: How to poach an egg).
    3. Place the bacon or ham under the grill and cook on both sides until browned. Keep warm if the eggs are still cooking.
    4. When the eggs and the bacon are almost ready, tear the muffins in half with your hands, taking care to break them evenly and place them in the toaster or under the grill.
    5. When the muffins have been lightly toasted, butter them generously and place in the middle of a warmed plate.
    6. Remove the bacon from the grill and sit one circular piece on top of each half muffin.
    7. Arrange the drained and trimmed poached egg on top of the bacon or ham and finally spoon the warmed Hollandaise sauce over the egg.
    8. Serve immediately.

    For you DD. I'm not sure whether it's a ISP thing or that you found them and they're cached somehow, or what. But I have only been able to open three of these videos since you started posting them. I used to like the "Good Eats" series on Food TV before I moved over here, you've posted a lot of those. Can't open a single one; I know you're just teasing me. No shit, I've tried several times.

    Although the one with jalapenos and such intrigued me.
    used to make green eggs & ham three eggs corianfer leaf, green onions coule of jalapenos, dollop of milk thow 'em inthe blender till they're just green slime fry like you would scrambled eggs. Slab of ham. Tired to feed 'em to the kids once, they passed. Guess they forgot their Dr. Suess

    FF - I just tested everyone of them on this thread and they all work, certianly aint on my cache cos i ddint bother to look at them before...

    perhaps your ISP is banning them or something wierd, virus?

    dunno, but they work for me!

    And your point would be????? Yes, even I can do that...it because there's those things called calluses on most cooks fingers...maybe if you spent more time actually cooking rather than posting, you could do the same!
