Thai cuisine has taken center stage at the Michelin Guide 2025 announcement, with Sorn by Chef Supaksorn “Ice” Jongsiri making history by receiving three Michelin stars.
This historic achievement is the first Thai restaurant to be awarded this prestigious accolade.
The victory of the Southern Thai cuisine restaurant Sorn marks a new milestone for both the national culinary and global gastronomic landscape.
Sorn is the first three-star restaurant in Thailand since the Michelin Guide debuted in the Kingdom in 2017.
First making its appearance on the one Michelin star list in the 2019 Guide Thailand, Sorn was promoted to two Michelin stars the following year and has maintained this prestigious recognition for five consecutive years.
Upon receiving the award, Chef Ice Supaksorn thanked his staff for believing in the idea of Sorn. “When the world doubted us, you guys (his staff) believed in me,” he said.
He also credited his family, particularly his son “Namkhaeng” (meaning ice in Thai), for giving him the courage to open Sorn.
“You always told me I’m your superhero. My superpower is you, your sister, and your mom—always. Some days you'll learn in school the name of the first man who landed on the Moon, but today your dad is the first man to land 3 Michelin stars in Thailand. A small piece of history was written, but it’ll never change,” he said as the crowd cheered and gave him a big round of applause.
The 3-Michelin starred chef also said the victory was also for his home country. “Thailand has never been colonized and we have a rich culture. I’m very proud of our culture.”
New Additions to the One Michelin Star List
In the 2025 Michelin Guide Thailand, Côte by Mauro Colagreco has been promoted from one star to two stars, joining the prestigious ranks of Baan Tepa, Chef’s Table, Gaa, Mezzaluna, R-Haan, and Sühring.
This exceptional restaurant captures the essence of Riviera-inspired cuisine in Bangkok, blending Mediterranean, French, and Italian influences through its seasonal menus.
Each dish is skillfully crafted using the finest produce of the day, presented with modern techniques that elevate the dining experience.
Of the five new one Michelin star entries, four are debutants making their first appearance in the Guide, while one is a promotion from the Michelin Selected category.
The four newcomers awarded one Michelin star are:
o AKKEE: Serving bold, regional Thai dishes prepared with traditional techniques, this restaurant brings a rustic charm to classic recipes in an immersive, dimly lit setting.
o AVANT: Helmed by a Singaporean chef, this restaurant combines traditional and modern techniques with meticulous attention to detail.
o GOAT: This establishment masterfully combines Thai, Chinese, and Western culinary elements within a seasonal Thai concept, featuring onsite-grown herbs and ingredients sourced from across Thailand.
o Aulis: A “Chef’s Table” restaurant offering a multi-course tasting menu showcasing native ingredients sourced through collaborations with Thai growers.
Notably, two of the newcomers—AKKEE in Nonthaburi and Aulis in Phang-Nga—are located outside Bangkok, expanding the geographical diversity of the starred establishments.
The only promotion from the Michelin Selected category is Coda, a restaurant celebrating regional Thai cuisine with modern techniques, offering a concise yet expertly seasoned tasting menu featuring delicately layered flavors.
Sustainability Recognition
Thai contemporary restaurant Baan Tepa is the sole new addition to the Michelin Green Star list, joining PRU, Haoma, and Jampa in recognition of their commitment to sustainability.
“I’m very excited about the Green Star award. Sustainability has been Baan Tepa’s philosophy since day one,” said Chef Chudaree “Tam” Debhakam, chef and owner of Baan Tepa, which has maintained its two Michelin stars.
She highlighted her team’s eco-friendly efforts, which include growing herbs and edible flowers on site, sourcing ingredients from sustainable producers, composting food waste into fertilizer, and creating zero-waste meals and drinks.
The team also engages in community initiatives promoting sustainable practices.
