Tarija, Bolivia may suit you. Nice wine there. However, Bolivia has it's own peculiar ways. Colombia pushed a lot of the right buttons. Beautiful Caribbean coastline (unfortunately the Pacific coastline is soggy and not too secure). Medellin was pretty decent for a big city and the little towns to the south in the Coffee Axis are gorgeous. Better brush up on your espaņol though as English speakers are not too numerous.
