You're confusing 'ngaw ngoo' with 'naw noo' - 'ง' with 'น'
Water is 'nam' starting with 'naw noo' = 'N' not 'Ng'.
'Nua' just means 'meat' - I haven't the faintest idea what 'ngua' means - does anyone here? In fact, to be accurate, you should say nua wua for beef, nua moo for pork, Nua pla for fish flesh, nua gai for chicken etc.
So the above quote should say 'nam tok' and 'Penang nua'.
