The reason we got into this conversation is cos I'd be adding oregano, basil, rosemary etc and she said that it's the quality and the simplicity that does the job.

All around the Med it is the simple peasant food which is best and uses fresh in season produce imo.

This doesn't help us much, living in a part of the world where tomatoes, for example, barely have any taste at all.
But yes, one thing's for sure with Italian food - there is no substitute for exceptionally tasty ingredients.
Some countries just have almost perfect climates for food and wine, and Thailand and the UK aint amongst them.
