We just leave them out on the countertop in a basket.

Rather your writing is the problem. No mortal, lesser or otherwise would confuse a "pantry" with a "cupboard".
I am pleased for you that you have two pantries, they indicate a sizable and solid older house, as few houses nowadays, if indeed any, are built with even one pantry.
Your guess on my accomodation is a bit off the mark, and not particularly germaine.

I keep my eggs in the fridge and buy them off a mates wife who has about 50 chickens, so there nice and fresh.
Stay clear of the cheap ones from the Market.....The wife says they could be Chinese copy eggs
PS..The wife saw it on Thai TV News a year or so back about copy eggs from China ,so it must be true

You are lucky. My pantry is probably 35+ degrees right now. Canned goods, rice, pasta, potatoes, onions, and garlic. Roasted chili in bottles and other dry spices. But if salami or eggs were there we might have a Portuguese breakfast when we woke up. I am going to take the garlic butter for our dinner out of the fridge now. In 30 minutes only it will be back to a soft butter consistency. Will admit to having always kept eggs in the fridge. Its all I know.Originally Posted by Neo

40 baht for ten and I try and keep 'em in the fridge but my Thai relatives don't understand this concept. They think refrigerating things ruins the texture. Calls of "Just wait 5 fucking minutes" are never heeded.
There doesn't seem to be any real point to eggs.
Apart from diverting attention away from where one keeps ones milk.
Wife still coming to terms with the word "austerity", but I have been on ducks eggs for some weeks now, (cheaper than chickens) and apparently they live in the big tall metal box shaped appliance in the kitchen.
Ducks eggs, that is one heck of a big orange yolk!, and the taste of scrambled is strange too. Might have to look at what Gordon or Delia says.
