    BG, as a newbi here on TD, I do enjoy reading about your cooking adventures. As someone who was born before the advent of fast food, and having to make the things that one needed for everyday life, because the store just did not carry them, or maybe you could not affordd them, keep up the cooking and life lessons for us all.

    Anyway....I bought beef in Pakchong at 650 for sirloin a kilo the other week and was good.

    Also bought bacon for 22o a kilo.

    Looking for BG's original meat supplier, have seen them before and thought i saved there link, but maybe not.

    I got a recipe from the book that came with my bread machine, and have 2 kilo of that Thai white swan bread flour so am making a loaf of White French bread and will see what it comes out as, first one from the book.
    and soon the stuff PeterP is sending will be here so then see what good flour makes, I am out of bread now and no more sour dough for awhile as blowing the blankets off the bed all night ain't to fun in this cold weather either.

    While we standing around here in the kitchen.
    I baked a loaf from my machine book yesterday with the white swan flour and it is quite good.
    600 g flour
    220 ml milk
    150 ml water
    2 Tbs sugar
    1 1/2 tso salt
    1/12 tsp yeast

    set machine on #3 program, 3:50 min. come back with 65 min on clock and remove dough hooks.
    We ate 1/2 of the 1,000G loaf for supper and I have eaten some for breakfast so have to set another loaf to go off at 1300 and so have it for supper.
    If that stuff Peter is sending is any better bread, then I will not be able to stand it.

    I know I am in the UK, but I have had a Panasonic breadmaker for a couple of years now. Highly recommended and dead easy. Also mixes a fantastic ciabatta in abot 30 minutes which I then stud with black olives and sun dried tomatoes. I prove it for about an hour in a barely warm oven before baking. It doesn't last long at all.
    The secret for me for all doughs was to use the quick acting yeast and put that in th emachine before the flour. Then add the fat, salt and sugar after the flour, then, finally, the water. Works every time

    My experience with breadmakers in LOS is not so good. I bought a Hitachi from Verasu and their service was great......but the breadmaker is krap and the Hitachi service center is even worse. It worked good for the first 5 months then started baking bricks [not rising] and I returned it to BKK to the service center and they returned it still broke. Now it's back in BKK and I don't expect it to be repaired properly. Been down for half of the 10 months that I've owned it. Thais know how to repair rice makers, but can't even spell breadmakers.

    I've since found a simple no knead recipe that makes better bread than my machine, but I'm out 6,000thb. Anyone considering buying a breadmaker here......don't.

    I'll post my great recipe if anyone is interested. It's and sooo much cheaper. same amount of clean-up and no moving parts or electronics to break.

    Go for it, we can always use good recipes, but my Severin machine is working perfectly and every time it gets better as I learn more about it, I got up at 0300 and set a loaf of Hawaiian egg bread, set the wrong menu and it was fucked at 0600 when I got up. my fault.
    I don't buy that much here as most stuff sold in Thailand is shit, and all stuff made in Thailand IS shit.
    But the only mess I have is a 1 cup measure, a tsp. and a Tbl. spoon measure..

    I too have a Severin breadmaker, purchased here in Phuket for 4200 baht. Its been working perfectly for thelast year. Admittedly its only a 400 watt machine but does loaves up to 1 kg. I have found that the best results from this machine come from placing the sugar and 2/3 cold water and 1/3 hot water, into the pan first, then adding the yeast. Leave it stand for 15 minutes to let the yeast start to foam up, then add the rest of the ingredients. A perfect loaf results every time.

    Thanks, I paid 4820 plus freight, which wasnt that much because I had a pretty good sized order and mine is the 800 watt #3986. and will handle 1600g loaves.
    I will give it a try as mine says to put the liquid in first and then the yeast and salt and sugar on top of flour,
    I have been getting some fantastic good bread with yeast instead of sour dough and I am just learning what each or the 10 programs does.
    I really do like it tho, and thanks again for the tips.

    Does yours have a warming cycle where it just sets and warms the can and stuff before going into mix and knead cycles?
    This one does, for 1/2 hour after you push the start button, it just sets there and if you feel the bottom of the case it is warming and I looked in the book and it has a chart for each menu number and what it does at any certain time and it is recommended that the dough hooks be removed after the last kneading and dough smoothing cycle.

    Yes, my unit has a warming cycle for the start ot the wholemeal bread cycle which I have used but find that the aforementioned 15 minutes of warm water yeast and sugar still give the best results regardless of whether it is wholemeal or white bread. I had previously been leaving the dough hook in the bread while it cooked but was not happy with the resultant hole in the a**e of the loaf so have changed to another recipe where I start by just using the kneading function, then remove the dough and the hook. I then replace the dough- minus hook, and give the dough another 45 minutes rising time. Once that has finished I start the machine again on the number 12 cycle which is baking only, for 1 hour (or part thereof depending on quantity) and the results are great - for me any way.

    the dough hooks come out of mine with no prob, and #7 is the mixing and kneading cycle, and then I can go to #8 and set the delay/raising time for up to 12 hours and then it will bake, I set 11 hours for sour dough, But use #3 mostly as that is 3:50 mins.
    I just made the standard I have been making for the last 3 times as it is good white/french bread, and this new flour raised it til it damn near touched the glass in the top. and is just finishing baking, christ, looks good.

    Looks great BG. Your machine is obviously different to mine as the single dough hook on my machine sits right in the bottom centre of the pan. The new flour is obviously making a difference as well. Must try some which I found today in Villa. Not that much more expensive than the Thai stuff I've been buying.

    thia one has 2 hooks about 1/3 of the way across the pan, and that loaf is to tall, over 8 inches, and weighs 1 kilo, so will make the next one with 400g instead of 600 which is the other recipe in my book. and this is Thai flour millig same as the white swan, but white swan is 40 baht and this is 60 at Tesco, but it sems to be a better product.
    PeterPan is sending me some stuff from tops so we see what it is, hell even my wife is eating bread now, she don't eat it with her meal as we do but eats it after as if it were cake. but then she only puts single or maybe 2 things on her plate at a time and eats it and gets something else,, like my oldest son did, he would not even let his mashed spuds touch his gravy for Christs sakes.
