The yam ring or yam pot (from $18), as it is also called, remains one of the classic signature dishes at the Dragon Phoenix Restaurant.

One of Singapore’s four “Heavenly Chefs” in the 1960s, owner Hooi Kok Wai is also known for creating this perennial favourite that has stood the test of time. Now 68 years old, he has semi-retired to the role of culinary consultant.

His eldest son Chris, the restaurant’s executive director, says the first version, which was shaped like the bowl monks carry when asking for alms, was vegetarian.

But after requests for a non-vegetarian version, the restaurant rolled out one with shredded chicken as well as a seafood one which comes with prawns and cashew nuts.

The stir-fried vegetables for the vegetarian version are julienned. For the seafood version, these are cut into cubes.

The sweet mashed yam is wondrously flaky on the outside and meltingly smooth on the inside.

The smooth texture is a delightful contrast with the yummy hodgepodge of crunchy greens.

The yam dish is as old as the restaurant, which was opened in 1963 in Maxwell Road. It is now in Novotel Clarke Quay hotel.
