The steamed pomfret done in typical Teochew style is popular with regulars, some of whom come in shorts and slippers to this restaurant tucked in a corner of an HDB block in Whampoa West.

The fresh fish ($28 for one big enough to comfortably serve two persons) comes in a clear broth to which a bit of stock from simmered chicken and pork bones has been added.

It is simply steamed with tomatoes, mushrooms, sour plum and topped with chopped Chinese parsley.

Noticeably absent are strips of fatty pork, at the request of health-conscious customers.

Koh Hoon Liang, the owner of the Teochew restaurant, says that when his father opened it more than 60 years ago, the fish was even drizzled with chicken oil to make it more fragrant.

The Teochew restaurant used to be in Wayang Street, which no longer exists but it was near Merchant Road.

Over the years, the menu has remained largely unchanged, with specialities such as braised goose (from $13) and or nee (yam paste, from $8).

Surprisingly, it also serves kong bak pao (steamed buns with braised pork, $12 and $14), which is actually Hokkien fare.

The steamed pomfret, however, remains a perennial favourite.
