So, she wants the diners to eat her garnishes etc too? Healthy veg? God forbid! Sushi? The weight will just pile on...

It's actually a good idea. Some people like being ordered what to do. Others will avoid her restaurant. No waste. Satisfaction for some - a myriad of other restaurant choices for everyone else (which would include me - I hate sushi, sashimi, wasabi & pickled ginger!). Win-win.
