    Overall, it wasn't that bad an effort but certainly a lurch into other directions and not what I would consider the classic Pad Thai. Shredded cabbage is frankly quite odd and I would never put in garlic.
    I prefer the narrow flat noodles, sen lek (?), and would add a bit of chicken to the kung for more depth of flavour. Tofu was missing too, I think, in addition to ground peanuts.

    My wife (a credentialed Thai chef) watched the video, and was trying to be open-minded, even make excuses for the guy at the start, but as it went on she became more and more perturbed. More than anything, apparently he gets the cooking order all wrong. She says its not surprising that he says pad thai is Chinese (which did make her cross), because he cooks it "Chinese style," in other words, what he makes is a Chinese dish with some Thai ingredients.

    I guess the Thai viewers didn't like it, probably...... because he's using the wrong ingredients, cooking it wrong and insulting their fish sauce!!
    Nothing wrong with his utensils, a wooden spatula is fine, but scrambled eggs? And cabbage? Nooooooo! Leave the cabbage out and gently fold the egg in at the end of cooking, not scramble them first and dump everything else on top!!

    It was kind of funny because when I pointed out the Savoy cabbage my wife said, "Well, he is just trying to show people they can use what they have," (I think pad thai probably started out as a kitchen sink kind of thing, like Caesar salad) and was letting it slide- she was pretty positive at first about a farang cooking Thai food. By the end of it smoke was coming out of her ears.

    I can understand that, you can't fuck up the preparation of good dishes and advertise it as the way to do it

    try that with French food and you will be crucified on the spot,

    of course for American and English food, such things are not an issue

    This shouldn't surprise, as to what passes for "English muffins" in the US is quite embarrassing. Almost 99.9% of American-English muffins are known only from the commercial pakaged product. Less, some daring Chef attempting to have a go from scratch.
