    A Bean Soup

    This is easy to make and just the ticket for these cold winter evenings. A hearty mung-bean soup, based on a recipe from the Philippines.


    -half a pack of beans(250g)
    -100ml coconut milk
    -onion, garlic, tomato; augergine or other veges optional
    -dried shrimps (and/or cubed pork belly)
    -salt, fishsauce, vinegar to taste

    1st: soak the beans in plenty of hot water for a few hours, add salt

    Boil at low heat ('congee' setting on my rice cooker) until the beans start to disintegrate -30 min.

    Chop up the veges, shallow-fry the aubergine, add onions after 5 min, and finally the garlic.


    Add the tomatoes, shrimps and the fry, simmer for another 10 min before adding the coconut milk.


    Simmer for another 10 min, add fish-sauce and vinegar.
    Chopped koriander leaves are an optional refinement just before serving.

    This makes more than one liter of steaming, thick soup.


    Note to the thaiophile cooks: You may add as much chillie (pik bon) as you like without spoiling the flavour.
