Lentil soup :
Saute one chopped up onion, four diced cloves of garlic, one diced stalk of celery in olive oil.
Three cups of beef broth (I make my own from neckbones) , washed lentils, salt , peppercorns, chopped up carrots, and bay leaves.
Boil for 45 min or until lentils are soft.
Serve with two tablespoons of vinegar mixed in your plate and good crusty bread.

So Today I made Greek meatballs, the ultimate comfort food IMO (meatballs with rice in them in a egg and lemon sauce)

Easy to make:
Half a lb ground beef
Half a lb ground pork
4 eggs
Parsley
I large onion
4 cloves garlic
one cup of rice
Three lemons
Salt
Paper
Mix ground beef and ground pork well. add 1 egg, i cup of rice,finely chopped up onion and garlic and parsley (some like dill). a couple of tablespoons of olive oil olive oil, salt and pepper mix well . form into meat balls and drop in poling water to cover. In the water put salt and pepper and I like to put a couple of cubes of chicken broth powder. Boil for about 45 min or until rice inside meatballs is soft.
Separate 3 eggs (or more depending how much broth you have) and beat the whites (i use an electric mixer, but can be done with a whisk) until frothy.Add yolks and beat together well. Add squeezed lemons, and beat all together well.
Now this is an important step!! add broth from the boiling pot into the egg mix a little at the time and beat together to bring the egg and lemon mix slowly to temperature. If you simply drop the egg mix in the boiling water the egg will curdle and you will get egg drop soup. This step is a lot easier than it sounds. When the egg/lemon mix is warm , you can add to the pot with the meatballs and let slow boil for 5 min.
