The wife made good use of some of lastnights beef , a rather delicious egg + beef stir fry rice complete with some rather delicious stir fry veg + a version of somtum , complete with fish sauce limes and that bloody awful shrimp paste !
Nevermind I,m feeling lucky tonight ,,,,, oh bollox just opened up an official looking envelope ,, I'm on jury service next month !

After the posts and discussion a few days ago related to the making of “TexMex” cuisine, I had decided to make my previous tentative thoughts of one day making
some “Fujita's” here in Thailand a reality. Call it what you will but I did a Frank Sanatra and “did it my way”.
I much more prefer pork and chicken to beef so I decided to prepare my “Fujita’s” using pork loin and boneless chicken breasts.
I sliced the pork loin and skinned and sliced the boneless chicken breasts.

The sliced pork and chicken was then marinated in a blend of Casa Fiesta prepared Fujita seasoning, olive oil, white wine, my special Cajun spice blend, and McCormick’s Spicy Montreal blend of spices.

I marinated the meats for about 16 hours.
I then prepared my purple skinned and regular onions, Bell pepper, and tomatoes by slicing and refrigerating in a covered plastic container to be used the following day when the cooking would be done.

fast forward 16 hours:

While the meats were cooking I shredded some cheese, got my salsa and tomatoes ready, and began to prepare the tomato flavored wraps.

When the meats were fully cooked, the wraps were warmed individually in a frying pan without any grease or oil for about 20 seconds on each side. As one warp was finished being warmed, it was placed on a plate,

the cooked meat, onion, and Bell pepper was then placed in the warm tomato wrap on the plate,

the shredded cheese and chopped tomatoes placed on top of the meat filling,

and the wrap folded/rolled with some spicy salsa placed on top.

I ate two of the “I did it my way” “Fujita’s” with some salsa, guacamole and chips on the side (not pictured). With the remaining wraps and meat filling, I made in similar way tucking in the ends of the wrap so that would fit in the ceramic casserole dish, placed them in a ceramic casserole oven dish, put some extra salsa and cheese on top, and put them in the refrigerator to be warmed up in the oven for dinner.

Took the journey from Ban Chang to East Pattaya last week to have lunch with a fellow TD'er friend. I took an abbreviated lunch of "pulled pork", fresh bread, and some garlic potato salad. The beverage Carlsberg was provided by the host. A nice meal a good conversation.... a nice afternoon out and about.

Yes I have to say I prefer pigs liver to lambs liver ,, I really enjoy the offal which I know is cheap in the UK compared to Thai ,, supply and demand I suppose.
Charley ,, are you sure mate about your liver ?? I allways thought the liver processed the blood ,,, I know sometimes the kidneys can stink a bit pissy as they filter the water ,, allthough I quite like that in a strange kinda way , never done me any harm.
I really enjoy slow cooking some ox heart but its bloody hard to try and get hold of here now ,, see if I can get some and do a picture of the old dinner , its delicious IMO
