Very little in the fridge to eat this evening, just some of yesterday's steamed rice, an onion, some vegemite and some pesto, so what to do? What to make?

Cut up the onion and gently fry it until it's soft.

Throw in yesterday's rice. Combine it with the onions and warm it through.

Hadn't made a curry for a couple of months so made a Goan pork vindaloo last weekend. Had it with a couple of chapatis on the Sunday and then finished it with some rice on the Monday.
Made a paste with the spices and vinegar and let the pork marinate for a few hours.

It was, the balsamic reduction over the veggies is wonderful.
balsamic is wonderful on anything, strawberries vege, meats everything.
In Spilumberto, Modena, the true center of Balsamic production, aged vinegar is sipped as a liqueur.
Marvellous stuff.
I had a steak in Modena many moons ago that had been marinaded and then cooked in balsamic vinegar. One of the best steaks I've ever had. Another one was a water buffalo steak in Pokhara, Nepal from the Everest Steak House. Awesome.

A bit of beef steak today. Supposed to be rib-eye. Dunno. I'll try it. Nev's quick and easy steak, mushrooms and taters.
Ingredients

1. Cook steak. 5 minutes or so
2. While steak is resting on a plate, warm through the mushrooms.
3. Add mushrooms to steak on the plate then add the potatoes.

Made a chili up using pork, pinto beans, roasted red bells and spicy Thai chilies. Lots of onions, some garlic, salt and pepper plus cumin, chili powder and my corn masa.
